Clinical testing of bread made from nullisomic 6A wheats in coeliac patients.

Abstract

The alpha-gliadins of wheat proteins exacerbate coeliac disease. Two genetic-variant wheats lacking the chromosome coding for some of these proteins were found to contain components of alpha-gliadin, and both exacerbated coeliac disease.
