Abstract
Starch and nonstarch polysaccharides enter the large gut where they are available for fermentation by the bacterial flora. The effect of fermentation on nitrogen metabolism, the supply of nutrients to the mucosa, and the carcinogen production is discussed in relation to epidemiological associations between dietary intake and large bowel cancer incidence.Entities:
