Abstract
The formation of naringinase, a glycolytic enzyme produced by Aspergillus niger, is repressed by glucose. Production of the enzyme is decreased below pH 4.0 and is stimulated by the presence of substrate. Fermentation conditions are described which cause the formation of the enzyme in approximately a fivefold greater concentration than that previously described.Entities:
