Tracking the use of antioxidants through industry surveys.

Abstract

The National Research Council has tracked the amounts of food additives used by the food industry since 1960. Data on the poundage of antioxidants are presented, as well as the food groups that are most likely to contain them. In addition, potential pitfalls in the use of survey data are presented.
