Abstract
Edible mushrooms are an important constituents of our daily diet due to their rich nutrition and beneficial properties for human health. Polysaccharides, the main component of edible mushrooms, attracted more and more attention because of their complex structure and diverse biological activities. Edible mushroom polysaccharides contain diverse medical activities, including anti-tumor, anti-inflammatory, antibacterial, hypoglycemic, and immune-enhancing activities et al. There were potential relevance between the structure and its biological activities. This mini-review summarizes current extraction methods of polysaccharides from edible mushrooms, chemical characterizations of the structures and their roles in biological activities, also provides new guidance on the development of edible mushroom polysaccharides.Entities:
