Abstract
The in vivo formation of phosphopeptides derived from bovine casein was proved in small intestinal chyme of minipigs after ingestion of a diet containing casein. The main phosphopeptide was identified as a fragment of alpha s1-casein (f 66-74): SerP-SerP-SerP-Glu-Glu-Ile-Val-Pro-Asn. It is discussed, that caseinophosphopeptides are likely to promote the intestinal absorption of calcium and trace elements.Entities:
