Figure 1Peptidases as a promising biocatalyst in sustainable processes. By exploring the microbial biodiversity the peptidases have been investigated. The illustration shows a simple scheme of production of these enzymes from microorganisms and their action in the decomposition of animal proteins and production of peptide hydrolysate.
