Abstract
The effect of the stunning current at slaughter on carcase quality was examined in 1845 broiler chickens. As the current was increased there was an increase and then a decrease in the incidence of red wingtips and in haemorrhages of the wing veins and the shoulder joint. The incidence of deep breast muscle haemorrhages increased above about 130 mA, and the incidence of broken bones increased between 75 and 170 mA. The incidence of carcase defects was lowest when either less than 130 or greater than 190 mA was used to stun the birds.Entities:
