Abstract

This article focues on the U. S. Army's solicitation of the science of food acceptability in its development of the World War II combat ration. The story of the Army's eventual inclusion of the science of food acceptability in its combat ration reseach program records the growth of food science generally, and palatable rations specifically, into critical components of the nation's security and subtenance.
