Rheometry of fermentation liquids.

Abstract

This article is concerned with the measurements of rheological properties of nonhomogeneous fermentation liquids. In order to determine the flow curves of such liquids, an impeller measuring system of own design was used, and the method of calibration of the system is presented. The experimental verification was carried out using samples of fermentation broth of Aureobasidium pullulans and it has been shown that the applied measuring technique gives internally consistent results. The sensitivity of the technique proves its applicability for monitoring and control purposes in fermentation technology.
