Abstract
Effects of different concentrations of glycerol on the activity of amylase, lipase, and proteases in frozen minced pancreas were studied. A 15% glycerol addition was found to decrease the proteolytic enzyme activity and to increase the activity of amylase. Moreover, accelerated freezing was shown to enhance the activity of all the enzymes studied.Entities:
