Changes in ascorbic acid and carbohydrate contents in tomato fruits infected with pathogens.

Abstract

Tomato fruits Var Romer VFN, inoculated with Fusarium equiseti, F. chlamydosporium, Geotrichum candidum, Acremonium recifei, Aspergilus flavus and A. niger showed decline in ascorbic acid content with days of incubation when compared with control (uninoculated) fruits. The total soluble sugars of the inoculated fruits also showed a reduction trend as the storage period was prolonged, but slight increase was observed on the 6th day after inoculation.
