Abstract
Glucosinolates are naturally occurring plant compounds that may be important in the dietary prevention of cancer. This study shows that they can be detected in their intact form by matrix-assisted laser desorption/ionization time-of-flight mass spectrometry (MALDI-TOF MS) with a high degree of sensitivity. The methodology was used to characterize a number of individual glucosinolates either produced by synthetic chemistry or isolated from plants. The method was used for crude plant extracts to rapidly examine the glucosinolate profile of the plant. The results for a range of plant extracts showed good agreement with previous LC-MS analysis of the desulfoglucosinolates from the same samples.Entities:
