Abstract
Lysozyme naturally present in raw hen egg white was immobilized by cross-linking the egg white foam with glutaraldehyde. Inclusion of N-acetyl glucosamine, a competitive inhibitor of lysozyme, was found to enhance the yield of lysozyme activity by fivefold.Entities:
